It's nextcloud that's keeping the drives spinning. Known "design issue" with it where it continually scans the share(s) you set and winds up keeping them up.

The only mce listed in the log was a fairly common one that affects certain combinations of hardware at CPU initialization time and is harmless. It wouldn't have been the cause of your reboot

Hard to say exactly without more detail. Depending upon what the error was on the docker run command that would have showed up, the app could have simply refused to start or went and became orphaned (it will show up under advanced view)

Personally, I'd try a different DNS server other than using your ISP's and see if that makes a difference (208.67.222.222 / 208.67.220.220)

Without the diagnostics, your posted SMART shows 42000 CRC errors over the course of 27000 hours. Reseat the cabling, remove power splitters etc.
