OpenVPN Access Server is commercial software. The docs probably have most of the details you want.
Not sure what the use case is for running two dockers on the same network. Maybe if you use the same active directory for both dockers then a single certificate would work? I just use OpenVPN-AS for accessing a single network. Perhaps someone else can give you a better answer for this.
If I understand your question, you just need to connect to the server from LAN on your mobile device and download/install the user certificate for that platform (windows, macOS, iOS, etc).
I was making some changes to configuration today and noticed that the list of drives to poll in fan control doesn't match the drives actually installed. Some are missing from the list.

The missing drive was added as a hot swap and I'm guessing that may be the issue. If so, is there some way to manually get the plugin to rescan the installed drives without having to reboot the system?
Just a guess on my part, but have you tried pushing the host’s dns settings?
I would suggest that the OpenVPN-AS forum might be a better place to resolve configuration issues with the app if you don’t get any good answers here.
Depends on how they are physically connected. Many external enclosures don’t support SMART (or at least most of mine don’t).
If they are installed into a slot in your server then they should have the same SMART features as all the other drives.
I’m not familiar with contr docker for p2p vpn, but openvpn has a very good reputation security wise and pretty easy to setup since that docker has already been adapted for unRAID.
You may be able to install contr as well using CA though.

All steps are performed in the webgui unless specifically directed otherwise.
