Typical Plex Appdata will have thousands and thousands of files contained within it. IMO, a cache pool is required to run containers. If only because of performance issues when appdata and the docker image is on a parity protected array. You can use mover to move appdata to the future cache pool, or appdata backup / restore to do it also (it should wind up being faster)

Can you still access the server itself via the local keyboard / monitor? Grab the diagnostics via the command prompt before you have to reboot.

What disk did you add? They're all showing pretty full... What sizes are you expecting the OS to show vs what Krusader / Windows shows?

Also, your BIOS version is rather old, and one of the later versions of the BIOS does outright say "- Improve memory compatibility."

Personally, I don't think this has anything to do with the docker image etc. This somewhat looks like memory issues. You've got the usual false advertising memory sticks that are sold as 3200MT/s. While you're not running them at the 3200 speed, but rather are running them at 2667, you should also try setting the BIOS to not run at any XMP profile and instead run the memory at the speed that you've paid for and not any falsely implied speed. IE: Disable. the xmp profile and run them at the stick's actual speed of 2133. Everything else is an overclock and all overclocks introduce instability. A memtest would also be a great idea from the boot menu. If you're booting the system via UEFI you will need to temporarily switch to legacy boot (or setup a new flash drive via https://www.memtest86.com/

Did you have a browser tab open to the syslog and it was slowly scrolling by when you tried to grab the diagnostics? sed etc will work fast. Your problem if you left that window open is that Chrome (or whatever browser you were using) was absolutely choking on trying to render the window continuously when there were that many lines. If you really want to have a scrolling page / whatnot with the log, SSH into the server and tail the file. Anything other than SSH (eg: the Terminal button) will also have the same issue. Browsers are not designed to render things like that. (FWIW, the diagnostics would have actually completed within say a minute and it would have been sitting in the /logs folder on the flash drive)

Easiest to diagnose Apps. Settings, Community Applications, Enable Debugging. Go To Apps. After ~5 minutes, go back to Settings, Community Applications and download the debug log. Post that back in the Community Applications thread

/logs folder on the flash drive. If it's exported as a share then it's in the flash share. Otherwise you need to power down, pull the flash and put into another system to get the diagnostics

On the shares tab can you hit Calculate next to your time machine share. That share is currently sitting on the cache drive and disk 1 (probably due to an initial misconfiguration). I think that the TM sparse file is actually on the cache drive which has currently 541G free space on it but your volume size limit for TM is set to 1TB, which means that this is going to fail. (It takes a bit for TM to figure that one out) TM shares ultimately are only a single file (a .dmg) so it has to be placed on a single drive and the volume size limit also has to be set accordingly so that there is always that space available on the particular drive. TM setup issues have become somewhat of a mission for me as of late as there is very little information available online about NAS settings for this (it is technically an unsupported configuration from Apple), and this is where I am right now. Also, in my experience, ANY TM backup that gets interrupted for any reason what-so-ever will never be able to continue backing up. Interruptions could be restarting the server, making changes to share settings etc.
