Is my i5-8500T CPU bottlenecking file transfers and my server overall?
Transfer a 30GB-File from your Windows machine to your unraid and again from unraid to Windows and see what happens. Since unraid v7 i see slow starting transfers from Windows to unraid with about 300MB/sek. Then it drops to 150MB and after a while it went up to ~950MB/sek. With the old v6 i had "instantly" 1150MB/sek and no "fluctuations"... Maybe they changed the drivers or somthing else on unraid because when i transfer back to Windows, i see 1100MB/sek at the start...

Unraid OS version 7.0.0 available
Found a strange "little" problem today... Normaly when i move Files from my PC to unraid, it happens with ~1100MB/sek over my 10GBit LAN. Since v7.0.0., the file transfer "fluctuates" around 650MB and drops to sometimes 150MB, then it went up to ~850MB. Thats strange because with v6, it was always constant at 1065-1185MB/sek - no fluctuations... I use on both machines a Samsung SSD 970 PRO (512GB/1TB).

AMD 8700G with 780M iGPU
HW-Transcoding under Plex is only working with Intel iGPUs (as far as i know).

Unraid is becoming a liability
A little bit strange... I use unraid since April 2010 and ye, sometimes troubles with HDDs, but not what you discribe... Maybe the wrong hardware...

upgrade options
You can use a "normal" (non server) Intel platform with a 12th gen CPU - avoid 13th and 14th gen CPUs. You have also the opportunity to set the PowerLevel within the BIOS. My "old" i7-9700 is running with 45W. A cheap solution could be a 12600K running at 45-50W. And if you ask: Why (the hell) a 12600K? Well - it has 10 cores and 16 threads - good for your VMs 👍

Bonding 2 NICs will enhance my speed?
No If you can bond (i am not sure), you get a 1GBit and a 2,5GBit Link - traffic will be devided by both NICs - but "not" added. As far is i know (also not sure), bondig must be supported by both NICs too... special Server-NICs from Intel can handle this. And last but not least: The Switch must also support bonding.

Take a 12th CPU - they are not affected. Only time will tell whats going on with 13th and 14th Intel CPUs...

Really Confused NAS mobo, Intel, AMD.... what route to go now?
If you want to change CPU, MoBo and RAM, you will spend "a little bit" more then 450.- 😉 And no, AMD (and NVidia too) does not support QuickSync because its an "Intel Feature" of the iGPU 👍 https://en.wikipedia.org/wiki/Intel_Quick_Sync_Video

Spindown on USB-Disks seems not supported... Did some tests with USB-Disks... all of them did not spin down.

GPU for transcoding?
If you want to use a GPU, you need a Plex-Pass too. And yes, HW-transcondig is more powerful then CPU-transcoding. An Intel iGPU is sufficient.

Unraid crash with LSI 9207-8i controller
This controller is server-hardware and has a powerconsumtion of 9,8W - 16W (!). Without cooling, it gets "very" hot - this is (maybe) the reason for you crashes... Operating Temp: 55° (max.) It needs an active cooling with 200 lfm (1m/s) or 30m³/hour.

Warum eigentlich? Diese Beiden "Firmen" würde ich komplett außen vor lassen... Ich benutze seit 2010 nurnoch ASRock, weil die Boards einfach funktionieren... über Jahre hinweg.

Well... let's see... .) Intel or AMD? Intel .) Plex? HW-Transcoding? Intel 9/10/11/12 with at least 16GB of RAM and iGPU + PlexPass That's it 👍 For the 10-20 "transcodet" Streams: The iGPU of my i7-9700 can handle 6-8x 4K to 1080p/8Mbit The CPU itself can handle 0,2x 4K-Streams 🤣 For more you need a much stronger GPU like a Nvidia Quadro or so...

2.5G connection...low speeds!
2,5Gbit has a max. throughput of 312MB/sek (2500 : 8 = 312) - so your 300MB/sek are pretty well on the limit - all ok👍 My 10GBit-Adapter has a max. of 1250MB/sek and reaches 1150MB/sek.
